Salted Caramel Chocolate Cake

Sometime back before school started, I was craving chocolate cake and my hands were itchy to make some salted caramel after watching a video of caramel on YouTube. With that, I decided to bake and decorate a whole cake from scratch, because I can :D


The components of the cake are:
- 2 Chocolate Sponge Cake
- Vanilla Swiss Meringue Buttercream
- Salted Caramel Sauce
- Caramel Popcorn

Okay, so I ran out of cocoa powder when I wanted to make this cake. I thought that I could save some time by making the cake the night before so that the cake will be nice and cold and ready for decoration the next day. LUCKILY I HAVEN'T MEASURE ANY OF MY OTHER INGREDIENTS IF NOT I HAVE TO RUN OUT TO THE SUPERMARKET LATE AT NIGHT FOR COCOA POWDER. But anyways, the next day I went to the closest supermarket and got Hershey's cocoa powder. I would prefer my Vanhouten but I had to compromise. My cake compromised too, it didn't taste that chocolate-ty. 
Vanhouten > Hershey's any day. 

I used swiss meringue buttercream because that is my favourite. I love how smooth the buttercream is and it's not as sweet as the American version! Also, it is much lighter due to the meringue, and you're not eating straight up butter and sugar. 








Ta-da!

How I layered it was cake, buttercream, caramel, cake, buttercream, caramel, caramel popcorn.
Some improvements that I could make the next time would be:
- Less sugar in my chocolate cake
- More buttercream & caramel for the filling
- Make more buttercream so that decoration will be easier

I really liked how the cake turned out in the end! My favourite part would be the caramel popcorn used for decoration, and the homemade caramel all around the cake. My family and boyfriend loved this cake, so maybe it will make another appearance at someone else's birthday or at an event? Either way I'm just happy for the opportunity to make a cake like this.
